Abstract
The nutritional compositions as well as anti-nutrient and mineral constituents of cashew nut (Anacardium occidentale) were investigated using standard methods. The result of the investigations showed the presence of moisture to be 7.5%, ash content 18.86%, crude fiber 104%, crude fat 55.95%, crude protein 49.63%, carbohydrate 11.708%, mineral element determine were lead 0.09mg/g, copper 0.09mg/g, zinc 0.75mg/m, cardium ND, magnesium 0.0wmg/g, chromium 0.4mg/g, ferrum 1.38mg/g, calcium 22.25mg/g, manganese 1.95mg/g. Cashew nut was described and introduced in the first chapter of the project, with the chapter two giving the environments where it can be found and some definitions, the chapter three of the project analysed the methods and materials used, results and discussion with calculations on percentages were done in chapter four while the project was concluded and recommended in chapter five of the project.
